Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 red bell pepper, sliced into thin strips

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

3 tablespoons soy sauce, divided

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided (plus more if needed)

1 tablespoon sesame oil

1 teaspoon sugar

1/4 cup beef broth or water

Cooked rice or noodles, for serving

Optional garnishes: sesame seeds and sliced green onions

Instructions

Marinate the Beef: In a medium mixing bowl, add the thinly sliced beef, 1 tablespoon of soy sauce, cornstarch, and 1 tablespoon of vegetable oil. Mix the ingredients thoroughly until the beef is well coated. Let it marinate for about 10 minutes while you prep the vegetables.

Prepare the Sauce: In a small bowl, combine the remaining 2 tablespoons of soy sauce, oyster sauce, sesame oil, sugar, and beef broth (or water). Whisk until well mixed and then set this sauce mixture aside for later use.

Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot and shimmering, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes, or until the beef is browned on the outside but still slightly undercooked inside. Use a slotted spoon to transfer the beef to a plate and set aside.

Stir-Fry the Vegetables: In the same skillet, add an additional splash of vegetable oil if needed. Toss in the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Add the broccoli florets and sliced red pepper. Continue to stir-fry for approximately 3-4 minutes, or until the vegetables become tender-crisp but still vibrantly colored.

Combine Ingredients: Return the beef to the skillet along with the pre-prepared sauce mixture. Stir everything together well, ensuring that the sauce evenly coats both the beef and vegetables. Cook for an additional 2-3 minutes, allowing the sauce to thicken and bind the flavors.

Serve: Remove the stir-fry from heat and spoon it over a bed of cooked rice or noodles. For a final touch, garnish with a sprinkle of sesame seeds and sliced green onions, if desired.
