2 cups distilled white vinegar

1 cup water

1 tablespoon salt

1 teaspoon black peppercorns

1 teaspoon cumin seeds

1 teaspoon crushed red pepper flakes (optional, for added heat)

1/2 teaspoon turmeric powder (for vibrant color)

Sterilized mason jars (16 oz or smaller)

Prepare the Jalapeños: Begin by thoroughly washing the fresh jalapeño peppers under cold water. Depending on your personal heat preference, slice the peppers into rings or halves. For a milder flavor, carefully remove the seeds; for those who crave more heat, keep the seeds intact.

    Make the Brine: In a medium saucepan, combine the distilled white vinegar, water, salt, sugar, garlic powder, black peppercorns, cumin seeds, crushed red pepper flakes (if you've chosen to include them), and turmeric powder. Place the saucepan over medium heat and bring the mixture to a boil, stirring continuously until the salt and sugar are fully dissolved.

      Pack the Jars: While your brine is heating up, take the sterilized mason jars and fill each with the prepared jalapeño slices. Be sure to leave approximately 1/2 inch of headspace at the top of each jar to allow for expansion.

        Pour the Brine: Once the brine reaches a rolling boil, carefully pour it over the jalapeños in each jar, ensuring that the peppers are thoroughly submerged in the liquid. To eliminate any air bubbles trapped inside, you can use a chopstick or another clean utensil to gently stir the contents.
