Ingredients

4 boneless, skinless chicken breasts

1 cup crushed pecans

1 cup panko breadcrumbs

2 large eggs

1/4 cup Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil (plus extra for spraying)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Begin by patting the chicken breasts dry with paper towels. This step is important as it ensures that the nut and breadcrumb coating adheres properly during cooking.

Make the Coating Mixture: In a large mixing bowl, combine the crushed pecans, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir the mixture thoroughly until all ingredients are well incorporated.

Prepare the Egg Wash: In a separate bowl, whisk together the eggs and Dijon mustard until the mixture is smooth and fully blended. This egg wash will serve as a binding agent for the nuts and breadcrumbs.

Coat the Chicken: Take each chicken breast and dip it into the egg wash, letting any excess drip back into the bowl. Next, roll the chicken in the nut-breadcrumb mixture, pressing gently to ensure an even and generous coating on all sides.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 5 minutes. This will help achieve that perfect crispy finish.

Air Fry the Chicken: Lightly spray the air fryer basket with olive oil to prevent sticking. Arrange the coated chicken breasts in the basket, ensuring that they do not touch to allow for even cooking. Give the tops of the chicken a light spray of olive oil to promote extra crispiness.

Cooking Time: Cook the chicken breasts in the air fryer for 12-15 minutes. Be sure to flip them halfway through the cooking process to ensure they brown evenly. The chicken is done when it’s golden brown and has an internal temperature of 165°F (75°C).

Rest and Serve: Once the chicken has finished cooking, carefully remove it from the air fryer and let it rest for about 5 minutes. This will help retain its juices. Before serving, garnish your nut-crusted pecan chicken with a sprinkle of chopped parsley for a fresh touch.

Enjoy: Pair your delightful nut-crusted pecan chicken with your favorite sides, such as roasted seasonal vegetables or a vibrant fresh salad.
