Air Fryer Sweet Corn Patties

2 cups sweet corn kernels (fresh off the cob or thoroughly thawed frozen)

1/2 cup breadcrumbs (using panko for an extra crispy texture)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped green onion

1/4 cup freshly chopped parsley

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Prep the Corn: If using fresh corn, carefully cut the kernels off the cob. For frozen corn, ensure they are completely thawed and well-drained. Use a paper towel to pat them dry, removing any excess moisture for optimal texture.

    Mix Ingredients: In a large mixing bowl, combine the sweet corn kernels, breadcrumbs, grated Parmesan, chopped red bell pepper, green onion, and parsley. Use a spatula or spoon to stir the mixture until all ingredients are evenly incorporated.

      Add Egg and Seasoning: Crack the egg directly into the corn mixture. Sprinkle in the garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly until everything is well combined and can hold its shape. If the mixture is too wet, gradually add more breadcrumbs until you achieve a firm yet pliable consistency.

        Form Patties: Using clean hands, scoop a portion of the mixture and shape it into a small patty, approximately 2 inches in diameter and 1/2 inch thick. Continue forming the patties until all the mixture is used up, yielding around 12 patties.

          Preheat Air Fryer: Set your air fryer to preheat at 375°F (190°C) for about 5 minutes to ensure it’s hot and ready for cooking.

            Cook the Patties: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the patties in a single layer inside the basket, ensuring that they do not touch. If necessary, cook in batches. Lightly mist the tops of the patties with olive oil to encourage browning.

              Air Fry: Cook the patties for 12-15 minutes, flipping them halfway through the cooking time. They should be golden brown and crispy on the outside.

                Serve: Once cooked, carefully remove the patties from the air fryer and allow them to cool slightly. Serve them warm with your choice of dipping sauce, like a zesty spicy mayo or a creamy avocado dip for added deliciousness.
