Apple Cinnamon Cheesecake Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1 teaspoon ground cinnamon

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened to room temperature

1 cup granulated sugar

1 teaspoon pure vanilla extract

2 large eggs, at room temperature

1 teaspoon ground cinnamon

1 cup sour cream, at room temperature

For the apple topping:

3 medium apples, peeled and thinly sliced (preferably Granny Smith or Honeycrisp for tartness)

1 tablespoon fresh lemon juice

1/4 cup packed brown sugar

1 teaspoon ground cinnamon

1 tablespoon unsalted butter, melted

Instructions
 

Preheat the Oven: Set your oven to 325°F (163°C). Grease a 9x9-inch baking pan with cooking spray or line it with parchment paper for easy removal.

    Make the Crust: In a medium mixing bowl, thoroughly combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Stir until the mixture resembles wet sand. Firmly press this mixture into an even layer at the bottom of the prepared baking pan. Bake the crust for 10 minutes, remove it from the oven, and allow it to cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, with an electric mixer, beat the softened cream cheese until creamy and smooth. Gradually add in the granulated sugar, continuing to mix until well incorporated. Add in the vanilla extract, followed by the eggs one at a time, mixing thoroughly after each addition. Next, blend in the ground cinnamon and sour cream. Beat until the mixture is completely smooth and creamy.
