Ingredients

For the Loaf:

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup peeled and diced apples (preferably Granny Smith or Honeycrisp)

For the Cinnamon Swirl Filling:

1/4 cup brown sugar, packed

2 teaspoons ground cinnamon

1 tablespoon unsalted butter, melted

For the Glaze (optional):

1 cup powdered sugar

2-3 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or lining it with parchment paper for easy removal of the loaf after baking.

Prepare the Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk these together thoroughly and set aside to ensure an even mix.

Make the Batter: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer or a whisk. Beat until the mixture is light and fluffy, which should take about 3-4 minutes. Add the eggs one at a time, blending well after each addition, then stir in the vanilla extract.

Incorporate the Dry Ingredients: Gradually add the prepared dry ingredients to the wet mixture, alternating with the buttermilk. Start and finish with the dry ingredients, mixing gently until just combined. Be careful not to overmix, as this can affect the texture of the loaf.

Fold in the Apples: Carefully fold the diced apples into the batter using a spatula or wooden spoon, making sure they are evenly distributed throughout the mixture.

Prepare the Cinnamon Swirl Filling: In a small bowl, combine the packed brown sugar, ground cinnamon, and melted butter. Mix well until you achieve a crumbly texture.

Layer the Batter and Filling: Pour half of the batter into the bottom of the prepared loaf pan. Evenly sprinkle half of the cinnamon swirl filling over this layer. Then, pour the remaining batter on top, finishing with the rest of the cinnamon swirl filling. Use a knife to gently swirl through the layers, creating a marbled effect without fully mixing them together.

Bake the Loaf: Place the loaf in the preheated oven and bake for 50-60 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.

Cool the Loaf: When the loaf is done baking, remove it from the oven and let it cool in the pan for about 10 minutes. After that, gently transfer it to a wire rack to cool completely.

Optional Glaze: If you'd like to add a glaze, mix together the powdered sugar, milk, and vanilla extract in a small bowl until you reach a smooth consistency. Drizzle the glaze over the cooled loaf before slicing.

Serve: Once sliced, enjoy your Apple Cinnamon Swirl Loaf fresh, or toast it for a warm and comforting treat. Perfect for breakfast, dessert, or a delightful snack!
