2 large eggs

1 teaspoon vanilla extract

1 cup plain yogurt (either Greek or regular)

1 medium apple, peeled, cored, and finely chopped (preferably Granny Smith or Honeycrisp)

½ cup walnuts or pecans, chopped (optional)

¼ cup raisins or dried cranberries (optional)

Extra cinnamon sugar for garnish (1 tablespoon sugar mixed with ½ teaspoon cinnamon)
