Ingredients

For the Muffins:

1 ½ cups rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup packed brown sugar

1 large egg

½ cup unsweetened applesauce

½ cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 large apple, peeled, cored, and diced into small chunks

For the Crunchy Topping:

¼ cup rolled oats

¼ cup packed brown sugar

2 tablespoons all-purpose flour

2 tablespoons unsalted butter, melted

½ teaspoon ground cinnamon

¼ cup chopped nuts (optional; walnuts or pecans work well)

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray to prevent sticking.

Prepare the Muffin Batter: In a large mixing bowl, combine 1 ½ cups of rolled oats, 1 cup of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of cinnamon. Whisk these dry ingredients together until they are evenly mixed.

Mix the Wet Ingredients: In another bowl, whisk together ½ cup packed brown sugar, 1 large egg, ½ cup of unsweetened applesauce, ½ cup of milk, and 1 teaspoon of vanilla extract until the mixture is smooth and well combined.

Combine Dry and Wet Ingredients: Gradually pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula or wooden spoon until just combined—be careful not to overmix. Fold in the diced apple, ensuring it is evenly distributed throughout the batter.

Prepare the Crunchy Topping: In a small bowl, combine ¼ cup of rolled oats, ¼ cup of packed brown sugar, 2 tablespoons of all-purpose flour, 2 tablespoons of melted unsalted butter, and ½ teaspoon of ground cinnamon. Mix until the mixture is crumbly. If desired, stir in the chopped nuts for extra crunch.

Fill the Muffin Tin: Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds of the way full to allow for rising. Generously sprinkle the crunchy topping over each muffin to create a delicious crust.

Bake the Muffins: Carefully place the muffin tin into the preheated oven. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean, indicating they are fully cooked through.

Cool and Serve: After baking, remove the muffin tin from the oven and allow the muffins to cool in the tin for about 5 minutes. Then, carefully transfer the muffins to a wire rack to cool completely. These muffins can be enjoyed warm or at room temperature, perfect for breakfast or an afternoon snack!
