1 ½ cups apple cider

2 cups all-purpose flour

¾ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ teaspoon salt

2 large eggs

½ cup unsweetened applesauce

⅓ cup vegetable oil

1 teaspoon vanilla extract

For Coating:

½ cup melted butter

½ cup granulated sugar

2 teaspoons ground cinnamon

Instructions
 

Reduce the Apple Cider: In a small saucepan, pour in the apple cider and bring it to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the quantity reduces to approximately ¾ cup. Remove the saucepan from the heat and allow the cider to cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick cooking spray to ensure easy release after baking.

      Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Combine thoroughly to ensure even distribution of the dry ingredients.

        Mix Wet Ingredients: In a separate bowl, whisk the eggs until frothy. Add in the applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Mix until the wet ingredients are smooth and well blended.

          Combine Wet and Dry Ingredients: Carefully pour the wet mixture into the dry ingredients. Using a spatula, fold the ingredients together gently until just combined. Do not overmix; it’s fine if there are a few lumps in the batter.
