Ingredients

6 large eggs

1 cup whole milk

1 cup all-purpose flour

1/2 cup shredded cheddar cheese

1/2 cup cooked chorizo or sausage, crumbled

1 small red bell pepper, finely chopped

1 small jalapeño, seeded and finely chopped

1/4 cup green onions, sliced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon paprika

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by greasing it lightly with oil or lining it with paper muffin liners for easy removal.

Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and add the whole milk. Use a whisk to beat the mixture vigorously until the eggs and milk are fully blended together, creating a uniform liquid.

Combine Dry Ingredients: In a separate mixing bowl, sift together the all-purpose flour, baking powder, salt, black pepper, and paprika. This will ensure an even distribution of the leavening agent and seasonings throughout the muffins.

Mix Ingredients: Slowly incorporate the dry ingredients into the egg mixture, using a spatula or wooden spoon to stir gently. Mix only until just combined; avoid overmixing to keep the muffins light and fluffy.

Add Fillings: Carefully fold in the shredded cheddar cheese, crumbled chorizo or sausage, finely chopped red bell pepper, jalapeño, and sliced green onions. Make sure all the fillings are evenly dispersed throughout the batter.

Fill Muffin Tin: Using a ladle or measuring cup, evenly distribute the muffin batter into the prepared muffin tin, filling each cup about three-quarters full to allow for rising during baking.

Bake the Muffins: Place the muffin tin into the preheated oven and bake for 20-25 minutes. The muffins should rise and turn a light golden brown on top. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean when fully baked.

Cool and Serve: After baking, remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes to firm up. Then, transfer the muffins to a wire rack to cool completely. Optional: garnish with fresh cilantro or parsley for a pop of color and flavor.

Enjoy: Serve these delightful muffins warm for a hearty breakfast, or pack them for a nutritious on-the-go meal during the week!
