200g block of feta cheese

300g cherry tomatoes, halved

3 cloves garlic, minced

300g penne pasta

1/4 cup extra virgin olive oil (plus extra for drizzling)

1 tsp red pepper flakes (adjust to taste)

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

1/2 cup fresh basil leaves, torn

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Freshly ground black pepper, for serving

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it reaches the proper temperature while you prepare the dish.

    Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes and minced garlic. Sprinkle in the red pepper flakes and dried oregano. Drizzle the mixture generously with 1/4 cup of extra virgin olive oil, then season with a pinch of salt and a few cracks of fresh black pepper to enhance the flavors.

      Add Feta: Place the block of feta cheese right in the center of the tomato mixture. Drizzle a little extra olive oil over the feta, and add a couple more pinches of salt and pepper atop it.

        Bake: Carefully transfer the baking dish to the preheated oven and bake for about 25-30 minutes. You'll know it's done when the tomatoes are bursting with juices and the feta has developed a beautiful golden crust.

          Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the penne pasta according to the package directions until it reaches an al dente texture—typically around 10-12 minutes. Once cooked, drain the pasta and set it aside.

            Combine Ingredients: When the feta and tomatoes are finished baking, remove the dish from the oven. Using a fork, gently mash and mix together the feta and tomatoes, creating a creamy sauce. Immediately add the cooked penne pasta right into the baking dish and toss everything together until the pasta is well coated in the sauce.

              Mix in Fresh Ingredients: Stir in the torn fresh basil leaves, grated Parmesan cheese, and the zest of one lemon. Mix thoroughly until all ingredients are evenly incorporated. Give it a taste, and adjust the seasoning with more salt and pepper if desired.

                Serve: Plate the pasta in individual bowls. For an elegant finish, drizzle a little extra olive oil over the top and sprinkle with freshly ground black pepper. Garnish with additional fresh basil leaves if you’d like for an extra burst of color and flavor.
