4 medium ripe tomatoes, diced into small pieces

1 medium cucumber, peeled and diced

1 red bell pepper, cored and diced

1 small red onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1/2 cup balsamic vinegar

1/4 cup extra virgin olive oil

1 tablespoon honey or maple syrup (optional, for added sweetness)

Salt and freshly ground black pepper, to taste

1 teaspoon dried basil

1 teaspoon dried oregano

Fresh basil leaves, for garnish

Instructions
 

In a large pot set over medium heat, combine the diced tomatoes, cucumber, red bell pepper, red onion, and minced garlic. Sauté the mixture for approximately 5-7 minutes, or until the vegetables are softened and aromatic.

    Pour in the vegetable broth and increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer. Add the balsamic vinegar, extra virgin olive oil, honey (if using), salt, pepper, dried basil, and oregano. Stir well to incorporate all flavors.

      Allow the soup to simmer for about 15 minutes, stirring occasionally to prevent it from sticking to the bottom of the pot. This will help the flavors meld beautifully.

        After simmering, carefully remove the pot from heat and let it cool slightly. Using an immersion blender, blend the soup until smooth. If you prefer some texture, blend just half of the soup and leave the remaining half chunky.

          Taste the soup and adjust the seasoning as needed. Add more salt, pepper, or balsamic vinegar according to your personal preference for a well-rounded flavor.

            Serve the soup warm or chilled. Ladle it into bowls, and garnish with fresh basil leaves on top. For an extra touch, drizzle a little balsamic vinegar and olive oil over the soup before serving.
