1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

2 cups cooked brown rice or quinoa (your choice)

1 cup corn (can be fresh, frozen, or canned - drained)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Shredded cheese (optional)

Sour cream (optional)

Cook the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the finely diced onion and red bell pepper. Sauté for about 5 minutes, stirring occasionally, until the vegetables are soft and fragrant. Add the minced garlic and continue cooking for an additional minute until the garlic is aromatic.
