Ingredients

1 lb ground beef (preferably grass-fed)

1 cup diced mango (fresh or frozen)

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon chili flakes (adjust to your spice preference)

1 tablespoon lime juice

1/4 cup green onions, finely chopped

Salt and pepper to taste

1 head of butter lettuce (or romaine) for wrapping

Instructions

Prepare the Mango Glaze: Start by making the mango glaze. In a small saucepan, combine the diced mango, soy sauce, hoisin sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and chili flakes. Cook the mixture over medium heat, stirring frequently for about 5-7 minutes until the mango softens and the glaze thickens slightly. Once ready, remove from heat and mix in the lime juice. Set the glaze aside to let the flavors meld.

Cook the Beef: Heat a large skillet over medium-high heat and add the ground beef. As the beef cooks, use a spatula to break it into smaller pieces. Season generously with salt and pepper. Cook until the beef is well-browned and fully cooked, approximately 5-7 minutes.

Combine with Glaze: Once the beef is cooked through, pour half of the prepared mango glaze over the meat. Stir well to combine, allowing it to cook for an additional 2 minutes so that the beef infuses with the delicious flavors of the glaze. Remove the skillet from heat.

Prepare the Lettuce Wraps: Carefully separate the leaves of the lettuce head, trying to keep them whole. Rinse the leaves under cold water to cleanse them and gently dry them with a clean towel to maintain their crispness.

Assemble the Wraps: Take a lettuce leaf and fill it with a generous spoonful of the beef mixture. Drizzle a little more mango glaze over the top, then finish with a sprinkle of finely chopped green onions for added freshness and color.

Serve: Arrange the filled lettuce wraps beautifully on a serving platter. Serve with the remaining mango glaze on the side for dipping, enhancing the tropical flavors. Enjoy your fresh and vibrant tropical beef lettuce wraps!
