1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

½ cup diced red bell pepper

½ cup diced red onion

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Prepare the Filling: In a large mixing bowl, combine the drained black beans, corn kernels, shredded cheese, diced red bell pepper, and diced red onion. Sprinkle in the ground cumin, chili powder, and a pinch of salt and pepper. Stir gently until all ingredients are well mixed and evenly coated with spices.

    Assemble the Quesadillas: Place a tortilla flat on a clean surface. Spoon a generous amount of the black bean and corn mixture onto one half of the tortilla, spreading it out evenly. Carefully fold the other half over the filling to form a half-moon shape. Press down gently to seal. Repeat this process for the remaining tortillas and filling.

      Cook the Quesadillas: Heat the olive oil in a large skillet over medium heat. Once hot, place one folded quesadilla in the skillet. Cook for approximately 3-4 minutes on each side, or until the tortilla turns golden brown and crispy. Use a spatula to gently flip the quesadilla. If necessary, add more olive oil to the skillet for subsequent quesadillas and repeat the cooking process.
