2 lbs pork tenderloin

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 cup fresh blackberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/4 cup honey

2 cloves garlic, finely minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon Dijon mustard

1 tablespoon soy sauce (optional, for an umami kick)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for the pork.

    Prepare the Pork: Take the pork tenderloin and pat it dry thoroughly with paper towels. This ensures a good sear. Generously season all sides of the tenderloin with salt and freshly ground black pepper.

      Sear the Pork: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Once hot, gently place the pork tenderloin in the skillet. Sear each side for about 3-4 minutes, or until it develops a nice golden-brown crust. Once seared, remove the skillet from heat.

        Create the Glaze: In a small saucepan over medium heat, combine the fresh blackberries, balsamic vinegar, honey, minced garlic, thyme leaves, Dijon mustard, and soy sauce, if using. Use a fork to lightly mash some of the blackberries as you mix. Allow the mixture to simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly into a syrupy glaze.

          Glaze the Pork: Brush the thickened blackberry balsamic glaze generously over the seared pork tenderloin, ensuring it is well coated.

            Roast the Pork: Carefully transfer the skillet with the glazed pork to the preheated oven. Roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C). Ensure a meat thermometer is used for accuracy.
