Blueberry Banana Popsicles

2 ripe bananas

1 cup fresh blueberries (or frozen)

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon fresh lemon juice

A pinch of salt

Instructions
 

Prep the Fruit: Start by peeling the ripe bananas and slicing them into small chunks for easier blending. If you're using fresh blueberries, rinse them thoroughly under cold water to remove any dirt. If you opted for frozen blueberries, you can use them straight from the freezer without thawing.

    Blend Ingredients: In a high-speed blender, add the banana chunks, blueberries, Greek yogurt, honey or maple syrup, fresh lemon juice, and a pinch of salt. Blend these ingredients together until the mixture reaches a smooth and creamy consistency. Pause as needed to scrape down the sides of the blender for an even blend.

      Taste and Adjust: Once blended, taste the mixture to see if it needs more sweetness. If you prefer a sweeter flavor, gradually add more honey or maple syrup, blending again to ensure it is fully incorporated.

        Fill the Molds: Carefully pour the blueberry-banana mixture into popsicle molds. Be sure to leave a small gap at the top of each mold to allow for expansion while freezing.

          Insert Sticks: If your popsicle molds come with lids that have built-in sticks, simply secure them in place. If not, after about 30-60 minutes of freezing—once the mixture has started to firm up—remove the molds from the freezer and insert wooden popsicle sticks into the center of each mold.

            Freeze: Return the filled molds to the freezer and allow them to freeze completely for at least 4-6 hours, or until they are solid and firm to the touch.

              Unmold and Enjoy: To easily pop out your delicious creations, run warm water over the outside of the mold for a few seconds. Gently pull at the popsicles until they release, and enjoy them immediately for a refreshing treat!
