1 medium butternut squash (approximately 2 lbs), peeled and diced into small cubes

2 cups fresh spinach, roughly chopped

12 lasagna noodles (choose whole wheat or gluten-free for a healthier option)

15 oz ricotta cheese

2 cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

2 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried oregano

1/2 teaspoon freshly grated nutmeg

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

1 cup marinara sauce (use homemade or your favorite store-bought brand)

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Prepare the Butternut Squash Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing them until softened and translucent (about 5 minutes). Incorporate the diced butternut squash, dried oregano, freshly grated nutmeg, and season with salt and pepper. Cook for approximately 10-15 minutes, stirring occasionally, until the squash becomes tender. If the mixture starts to stick, add a splash of water to help it cook evenly. Once tender, lightly mash the squash with a fork, leaving some chunks for added texture.

      Cook the Lasagna Noodles: Fill a large pot with salted water and bring it to a boil. Cook the lasagna noodles according to the package instructions until they are al dente. Once cooked, drain the noodles and lay them flat on a parchment-lined surface to prevent them from sticking together.

        Make the Cheese Filling: In a mixing bowl, combine the ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan cheese. Season with a pinch of salt and pepper, then mix well to create a smooth and creamy cheese filling.

          Assemble the Lasagna:

            - Spread a thin layer of marinara sauce evenly on the bottom of a 9x13 inch baking dish.

              - Layer 3 lasagna noodles lengthwise on top of the sauce.

                    - Repeat the layers: add another 3 noodles, the remaining butternut squash mixture, the remaining spinach, and the remaining ricotta filling, finishing with a drizzle of marinara sauce.

                      - For the final layer, top with 3 noodles, cover with the remaining marinara sauce, and sprinkle the rest of the shredded mozzarella and grated Parmesan cheese on top.

                        Bake the Lasagna: Cover the assembled lasagna with aluminum foil (for best results, lightly spraying the foil with cooking spray to prevent sticking). Place it in the preheated oven and bake for 25 minutes. After this, remove the foil and continue baking for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                          Rest and Serve: After baking, allow the lasagna to rest for about 10-15 minutes before slicing to help it set. Garnish with fresh basil leaves if desired. Serve warm, and delight in the harmonious blend of flavors!
