Ingredients

For the Grits:

1 cup stone-ground grits

4 cups water

1 cup whole milk

1 cup shredded sharp cheddar cheese

1/2 cup unsalted butter

Salt and freshly ground black pepper, to taste

For the Cajun Chicken:

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

For the Waffle Assembly:

1 cup buttermilk pancake mix (store-bought or homemade)

1 cup water

2 tablespoons maple syrup (for drizzling)

2 green onions, finely sliced (for garnish)

Extra shredded cheddar cheese (for topping, optional)

Instructions

Prepare the Grits:

    - In a large pot, bring 4 cups of water to a rolling boil. Gradually whisk in the stone-ground grits, then lower the heat to a gentle simmer. Cook according to package instructions (usually around 20-25 minutes) until creamy and thickened.

      - Once the grits are cooked, stir in the milk, shredded cheddar cheese, and unsalted butter. Season liberally with salt and freshly ground black pepper to taste. Keep the mixture warm on low heat.

        Cook the Cajun Chicken:

          - Preheat your grill or a heavy skillet over medium-high heat until hot.

            - In a mixing bowl, combine the Cajun seasoning, olive oil, lemon juice, garlic powder, salt, and freshly ground black pepper. Coat each chicken breast evenly in this flavorful mixture.

              - Grill or pan-fry the chicken for approximately 6-7 minutes on each side or until the chicken is thoroughly cooked (internal temperature should reach 165°F) and nicely browned. Once done, remove from the heat and let it rest for 5 minutes before slicing into strips.

                Make the Waffles:

                  - In a medium mixing bowl, combine the buttermilk pancake mix and water; stir gently until just combined (take care not to overmix, as this can make the waffles tough).

                    - Preheat your waffle maker according to the manufacturer’s instructions and lightly grease it with cooking spray or oil. Pour the batter into the preheated waffle maker and cook until the waffles are golden brown and crisp, following the cooking time guidelines provided with your waffle maker.

                      Assemble the Waffle Stacks:

                        - Begin with one waffle as the base. Spread a generous layer of the cheesy grits on top.

                          - Place a portion of the sliced Cajun chicken over the grits, then top with another waffle.

                            - Repeat the layering process with remaining waffles, grits, and chicken as desired, finishing with a final waffle on top.

                              Serve and Enjoy:

                                - Drizzle the stacked waffles with maple syrup and garnish with sliced green onions. For an extra touch, sprinkle more shredded cheddar cheese on top if desired.

                                  - Serve immediately while hot and enjoy the delightful combination of flavors in your Cajun Chicken & Grits Waffle Stacks!
