2 cups fresh jalapeño peppers, whole or sliced

2 cups diced cherry tomatoes

1 cup diced red onion

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans (rinsed and drained)

1/2 cup chopped fresh cilantro

1/2 cup diced cucumber (optional for added crunch)

1 cup apple cider vinegar

1/2 cup water

1 tablespoon salt

1 tablespoon sugar (optional, to balance heat)

1 tablespoon garlic powder

1 tablespoon ground cumin

1 tablespoon olive oil

Juice of 1 lime

Freshly cracked black pepper, to taste

Instructions
 

Prepare the Jalapeños: Rinse the jalapeño peppers under cold water to clean. For a milder taste, carefully remove the seeds and membranes with a small knife. Slice the peppers into rings or leave them whole for a more intense flavor experience.

    Create the Salad Base: In a large mixing bowl, combine the diced cherry tomatoes, red onion, corn, black beans, cilantro, and diced cucumber if using. Gently toss the ingredients together to ensure even distribution.

      Prepare the Brine: In a medium saucepan over medium heat, combine the apple cider vinegar, water, salt, sugar (if desired), garlic powder, cumin, olive oil, lime juice, and freshly cracked black pepper. Stir the mixture until the salt and sugar dissolve completely. Allow the brine to come to a slight simmer for approximately 5 minutes, then remove it from heat to cool slightly.

        Pack the Jars: Carefully pack the prepared jalapeños into clean, sterilized canning jars, filling them to about 1/2 inch from the top. Pour the cooled brine over the jalapeños, making sure they are completely submerged. Leave a little headspace at the top.

          Seal the Jars: Wipe the rims of the jars with a clean cloth to eliminate any residue. Place sterilized lids on top of the jars and screw on the metal bands securely until they are fingertip-tight.

            Water Bath Canning: Fill a large pot with water and bring it to a vigorous boil. Using jar tongs, carefully lower the jars into the boiling water. Process the jars for 10-15 minutes, adjusting the time based on your altitude and ensuring a proper seal.

              Cooling and Storage: After processing, gently transfer the jars to a cooling rack using jar tongs. Allow the jars to cool completely. After cooling, check the seals by pressing the center of each lid; if it doesn’t pop back, your seal is intact.

                Combine and Serve: Let the canned jalapeños rest for at least 24 hours to enhance the flavor. When ready to serve, open a jar and mix the jalapeños with the salad base. Serve the salad chilled or at room temperature, garnished with additional fresh cilantro if desired.
