Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup plain yogurt (or use dairy-free yogurt for a vegan option)

2 tablespoons tikka masala spice blend

1 tablespoon fresh lemon juice

2 tablespoons olive oil, divided

1 teaspoon garlic paste

1 teaspoon ginger paste

1 large onion, finely diced

2 medium ripe tomatoes, pureed until smooth

1 can (14 oz) coconut milk

1 teaspoon garam masala

Salt, to taste

Fresh cilantro leaves, chopped, for garnish

Instructions

Marinate the Cauliflower: In a large mixing bowl, whisk together the yogurt, tikka masala, lemon juice, garlic paste, ginger paste, and salt until well combined. Add the cauliflower florets, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and let it marinate for at least 30 minutes at room temperature, or refrigerate for up to overnight for a deeper flavor infusion.

Roast the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup. Spread the marinated cauliflower evenly on the baking sheet, then drizzle with 1 tablespoon of olive oil. Roast in the oven for about 20-25 minutes, or until the florets are tender and have developed a nice char.

Prepare the Masala Base: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5-7 minutes, stirring frequently, until the onion becomes translucent and golden brown. Next, pour in the pureed tomatoes and cook the mixture for another 5 minutes, allowing it to thicken slightly.

Combine Ingredients: Reduce the heat to low and pour in the coconut milk, stirring well to combine with the onion-tomato mixture. Gently fold in the roasted cauliflower while ensuring each piece is well-coated in the creamy sauce. Sprinkle the garam masala on top and adjust salt to taste.

Simmer: Increase the heat slightly and let the tikka masala simmer gently for about 10 minutes, stirring occasionally. This will allow all the flavors to meld beautifully.

Garnish and Serve: Once simmered, turn off the heat and sprinkle fresh cilantro over the dish for a bright, herbal finish. Serve the Spicy Cauliflower Tikka Masala hot, accompanied by fluffy basmati rice or warm naan bread for a complete and satisfying meal.
