1 cup snap peas, trimmed of their ends

1 cup broccoli florets, cut into bite-sized pieces

1/2 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

2 tablespoons extra virgin olive oil

2 cloves garlic, minced finely

1 tablespoon soy sauce

1 tablespoon balsamic vinegar

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Prep the Vegetables: Begin by washing all your vegetables thoroughly. Slice the bell peppers into thin strips, the zucchini into rounds before halving them, and julienne the carrots into thin matchsticks. Halve the cherry tomatoes, trim the ends of the snap peas, and separate the broccoli into small florets.

    Heat the Pan: In a large skillet or wok, pour in the olive oil and heat it over medium-high heat until it shimmers nicely.

      Cook the Aromatics: Add the minced garlic to the hot oil and sauté for about 30 seconds, stirring frequently, until the garlic becomes fragrant but not browned.
