Ingredients

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon freshly cracked black pepper

½ teaspoon smoked paprika

¾ cup buttermilk, at room temperature

2 large eggs, at room temperature

¼ cup olive oil

1 cup shredded sharp cheddar cheese

½ cup diced salami

½ cup diced prosciutto

½ cup diced pepperoni

¼ cup chopped green onions

¼ cup sliced black olives

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C). Prepare a 12-cup muffin tin by greasing it with cooking spray or lining it with paper muffin liners.

Combine Dry Ingredients: In a large mixing bowl, vigorously whisk together the flour, baking powder, baking soda, salt, black pepper, and smoked paprika. Ensure that these dry ingredients are well incorporated and free of lumps.

Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and olive oil until the mixture is smooth and well-blended. It’s best to use room-temperature ingredients for better emulsification.

Combine Mixtures: Carefully pour the wet ingredients into the bowl with the dry ingredients. Using a spatula, gently fold them together until just combined. It's important not to over-mix the batter; a few small lumps are perfectly acceptable.

Add the Charcuterie: To the batter, fold in the sharp cheddar cheese, diced salami, prosciutto, pepperoni, chopped green onions, and sliced black olives. Make sure that all the add-ins are evenly distributed throughout the mixture.

Fill Muffin Cups: Use a spoon or an ice cream scoop to portion the batter into the prepared muffin cups, filling each cup approximately ¾ full to allow for rising during baking.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. Look for a golden-brown top, and insert a toothpick into the center of a muffin; it should come out clean when they are ready.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes. Carefully transfer them to a wire rack to cool completely. These muffins can be served warm or at room temperature, making them perfect for brunch or snacking.
