1 red bell pepper, halved and seeds removed

1 yellow bell pepper, halved and seeds removed

1 medium zucchini, sliced into thick rounds

1 small eggplant, sliced into ½-inch rounds

1 medium red onion, cut into thick slices

4 tablespoons olive oil

2 teaspoons balsamic vinegar

Salt and freshly ground black pepper, to taste

1 teaspoon dried oregano

1 teaspoon garlic powder

4 slices of whole grain or sourdough bread

4 ounces of fresh goat cheese (or hummus for a vegan option)

Fresh basil leaves, for garnish

Preheat the Grill: Start by heating your grill or grill pan over medium-high heat until it's hot enough for grilling.

    Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchini, eggplant, red bell pepper, yellow bell pepper, and thick red onion slices. Drizzle the mixture with olive oil and balsamic vinegar. Season generously with salt, freshly ground black pepper, dried oregano, and garlic powder. Toss everything gently until all the vegetables are evenly coated with the oil and seasonings.
