1 yellow bell pepper, cut into large strips

1 medium eggplant, sliced into ½-inch rounds

1 red onion, sliced into thick rings

2 teaspoons smoked paprika

1 teaspoon garlic powder

4 slices whole grain or sourdough bread

1 cup fresh arugula

4 tablespoons hummus or your favorite spread

Prep the Vegetables: In a large mixing bowl, add the sliced zucchini, red and yellow bell peppers, eggplant, and red onion. Drizzle the olive oil over the vegetables, then sprinkle the smoked paprika, garlic powder, salt, and pepper on top.
