1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

For the Chili:

1 pound ground beef (or ground turkey for a lighter option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon olive oil

For Assembly:

Additional cheddar cheese slices (optional)

Fresh cilantro, chopped (for garnish)

Prepare the Biscuits:

    - Begin by preheating your oven to 450°F (230°C).

      - In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well blended.

        - Work the cold, cubed butter into the dry mixture using a pastry cutter or your fingertips, continuing until the mixture resembles coarse crumbs.

          - Gently fold in the shredded sharp cheddar cheese until evenly distributed.

            - Gradually pour in the buttermilk, stirring gently just until the dough comes together without overmixing.

              - Transfer the dough onto a lightly floured surface and knead it gently for about 30 seconds. Flatten it into a rectangle roughly 1 inch thick.

                - Using a biscuit cutter or a glass, cut out biscuits and arrange them on a baking sheet lined with parchment paper.

                  - Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown and cooked through.

                    Prepare the Chili:

                      - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until it becomes translucent.

                        - Add the minced garlic and sauté for an additional minute, stirring constantly to avoid burning.

                          - Incorporate the ground beef (or turkey) into the skillet, cooking until browned. Break it apart with a spoon as it cooks.

                              - Reduce the heat and allow the chili to simmer for 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.

                                Assemble the Sliders:

                                  - Once the biscuits are baked and slightly cooled, slice each biscuit in half horizontally.

                                    - Spoon a generous portion of the chili onto the bottom half of each biscuit. If desired, add a slice of cheddar cheese on top of the chili for extra richness.

                                      - Gently place the top half of the biscuit over the chili to create the slider.
