1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Preheat the Oven: Set your oven to preheat at 375°F (190°C).

    Prepare the Spinach: In a medium skillet, warm the olive oil over medium heat. Add the chopped spinach and sauté for approximately 2-3 minutes, stirring frequently until the spinach is wilted and tender. Remove from heat and let it cool slightly.

      Whisk the Mixture: In a large mixing bowl, crack the eggs and add the milk, garlic powder, salt, black pepper, and red pepper flakes (if desired). Whisk vigorously until all the ingredients are fully combined. Once combined, fold in the sautéed spinach along with the mozzarella and Parmesan cheeses, ensuring an even distribution.

        Prepare the Muffin Tin: Generously grease a standard muffin tin with cooking spray or a thin layer of olive oil to avoid sticking.
