Cheesy Beef and Broccoli Rice Casserole

1 lb ground beef

1 cup uncooked brown rice

2 cups beef broth

2 cups broccoli florets (fresh or frozen)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp freshly ground black pepper

1 cup shredded cheddar cheese (plus an additional 1/2 cup for topping)

1 cup sour cream

1/4 cup milk

1/4 cup grated Parmesan cheese

Salt, to taste

Olive oil, for cooking

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s hot and ready for baking.

    Sauté the Aromatics: In a large skillet over medium heat, drizzle a tablespoon of olive oil. Add the chopped onion and minced garlic, stirring frequently until the onion is translucent and fragrant, about 3-4 minutes.

      Brown the Ground Beef: Increase the heat slightly, add the ground beef to the skillet, breaking it apart using a spatula. Cook, stirring occasionally, until the beef is well browned and cooked through. Season with onion powder, garlic powder, smoked paprika, black pepper, and salt. Drain any excess fat if necessary.

        Cook the Rice: In a medium saucepan, combine the uncooked brown rice and beef broth. Bring the mixture to a rolling boil, then reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the rice is tender and has absorbed all the liquid.

          Combine the Ingredients: In a large mixing bowl, combine the cooked beef mixture, the cooked rice, broccoli florets, shredded cheddar cheese, sour cream, milk, and grated Parmesan cheese. Stir thoroughly until all ingredients are well incorporated.
