Ingredients

1 lb ground turkey

1 cup uncooked pasta (choose your favorite, such as penne or rotini)

1 cup ranch dressing

1 cup shredded cheddar cheese (plus additional for topping)

1/2 cup cream cheese, softened to room temperature

1 cup diced broccoli florets (can use fresh or frozen)

1/2 cup finely diced onion

2 cloves garlic, minced

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/2 cup milk

1/2 cup crushed tortilla chips (for a crunchy topping)

Fresh parsley, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta of your choice and cook according to the package instructions until al dente. Once cooked, drain and set aside.

Cook the Ground Turkey: In a large skillet over medium heat, add the ground turkey. Sauté for about 5-7 minutes, or until it is browned and fully cooked. Use a spatula to break the turkey into smaller pieces as it cooks. Drain any excess fat from the skillet.

Sauté Onions and Garlic: To the skillet with the cooked turkey, add the diced onion and minced garlic. Sauté for an additional 2-3 minutes, or until the onion becomes translucent and fragrant.

Incorporate Broccoli: Add the diced broccoli to the skillet. Stir and cook for about 3-4 minutes, or until the broccoli is just tender but still vibrant in color.

Make the Sauce: In a mixing bowl, combine the ranch dressing, softened cream cheese, milk, paprika, salt, and black pepper. Whisk together until the mixture is smooth and well-blended. Pour this creamy mixture into the skillet with the turkey and vegetables, stirring to ensure everything is evenly coated.

Combine Pasta and Cheese: Add the previously cooked pasta and 1 cup of shredded cheddar cheese to the skillet. Gently stir until the pasta is fully incorporated into the creamy sauce.

Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter. Carefully transfer the turkey-pasta mixture into the baking dish, spreading it out evenly.

Add Toppings: Sprinkle additional shredded cheddar cheese and crushed tortilla chips evenly over the top of the casserole for a delightful crunch.

Bake: Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the cheese is melted, bubbly, and has turned golden brown.

Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for about 5 minutes. Before serving, garnish with freshly chopped parsley for a pop of color and freshness. Enjoy your comforting and cheesy casserole!
