1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

8 small flour tortillas

2 tablespoons olive oil (or butter, for richer flavor)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, mozzarella cheese, cheddar cheese, garlic powder, onion powder, and chili powder (if you prefer a bit of spice). Season the mixture with a pinch of salt and pepper. Use a spatula to mix everything thoroughly until all ingredients are well combined.

    Heat the Tortillas: Preheat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, place a tortilla in the skillet and warm it for about 30 seconds until it becomes soft and pliable. Remove the warmed tortilla and set it aside on a plate. Continue this process for the remaining tortillas, adding more oil if needed.

      Assemble the Quesadillas: Return one warmed tortilla to the skillet. On one half of the tortilla, generously layer a portion of the chicken and spinach filling. Carefully fold the other half of the tortilla over the filling, creating a half-moon shape that seals the delicious filling inside.
