Ingredients

20 jumbo pasta shells

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup Parmesan cheese, grated

1 egg

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Boil the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook according to package instructions until al dente. Once cooked, drain the pasta shells and set them aside to cool slightly on a wire rack.

Cook the Turkey: Heat a large skillet over medium heat and add the ground turkey. Cook for approximately 5 to 7 minutes, using a spatula to break it apart as it browns. Ensure that it is fully cooked and no longer pink.

Add Aromatics and Spinach: Once the turkey is browned, stir in the minced garlic and chopped spinach. Cook for an additional 2 to 3 minutes until the spinach has wilted. Season the mixture with Italian seasoning, salt, and pepper, then remove from heat to let it cool slightly.

Prepare the Filling: In a large mixing bowl, combine the turkey and spinach mixture with ricotta cheese, shredded mozzarella, grated Parmesan cheese, and the egg. Mix thoroughly until all ingredients are well incorporated.

Stuff the Shells: Spread ½ cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Take a cooled jumbo shell, generously fill it with the turkey and spinach filling, then place it seam-side up in the prepared baking dish. Repeat with the remaining shells.

Top with Sauce and Cheese: Once all the shells are stuffed, pour the remaining marinara sauce over them, ensuring each shell is well-covered. Finish by sprinkling additional shredded mozzarella cheese on top for an extra cheesy finish.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, remove the foil and continue to bake for an additional 10 to 15 minutes, or until the cheese is beautifully bubbly and golden brown.

Serve: Allow the stuffed shells to cool for about 5 minutes before serving. If you like, garnish with fresh basil leaves for a pop of color and added flavor.
