Ingredients

2 cups cooked turkey, shredded or diced

3 cups broccoli florets, steamed until tender

2 cups cooked quinoa or rice (for a gluten-free option)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (store-bought or homemade)

1 cup milk (whole or low-fat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for added crunch)

2 tablespoons olive oil (for mixing with breadcrumbs, if using)

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). This ensures that it's hot enough for even cooking.

Combine Ingredients: In a large mixing bowl, combine the shredded turkey, steamed broccoli, cooked quinoa (or rice), half of the shredded cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir well until all ingredients are evenly incorporated, creating a creamy, flavorful mixture.

Prepare Casserole Dish: Lightly grease a 9x13 inch casserole dish with cooking spray or oil. Spoon the turkey and broccoli mixture into the dish, spreading it out evenly to ensure uniform cooking.

Add Cheese Topping: Evenly sprinkle the remaining shredded cheddar cheese over the top of the casserole for a melty finish.

Breadcrumb Topping (Optional): If you opt for a crunchy topping, mix the breadcrumbs with olive oil in a small bowl until they are fully coated. Lightly sprinkle this mixture over the layer of cheese for added texture.

Cover and Bake: Cover the casserole dish with aluminum foil to prevent excessive browning. Place it in the preheated oven and bake for 25 minutes.

Uncover and Continue Baking: After 25 minutes, carefully remove the foil and continue baking for an additional 15 minutes. The casserole is done when the cheese is bubbly and golden brown (if using breadcrumbs, they should also be toasted to a nice golden color).

Cool and Garnish: Once baked, remove the casserole from the oven and let it stand for about 5 minutes. This allows the dish to set slightly, making it easier to serve. Garnish with freshly chopped parsley for a vibrant touch.
