1 lb ground turkey

3 cups fresh broccoli florets

1 cup uncooked brown rice

2 cups low-sodium chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ cup plain Greek yogurt

1 cup breadcrumbs (optional topping)

2 tablespoons olive oil

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to prepare for baking.

    Cook the Brown Rice: In a medium saucepan, bring 2 cups of low-sodium chicken broth to a vigorous boil. Add 1 cup of brown rice, then cover the pot and reduce the heat to low. Allow it to simmer for approximately 45 minutes or until the rice is tender and the broth has been fully absorbed. Once done, set aside.

      Sauté the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes, stirring occasionally, until the onion is translucent and fragrant.

        Cook the Ground Turkey: To the skillet, add the 1 lb of ground turkey, using a spoon to break it into smaller pieces. Sprinkle in 1 teaspoon of paprika, 1 teaspoon of dried thyme, 1 teaspoon of salt, and ½ teaspoon of black pepper. Cook for 5-7 minutes, stirring occasionally, until the turkey is fully browned and cooked through.

          Incorporate the Broccoli: Add the 3 cups of broccoli florets to the skillet, stirring them into the turkey mixture. Sauté for an additional 3-4 minutes until the broccoli turns bright green but remains crisp.

            Combine All Ingredients: In a large mixing bowl, combine the cooked brown rice, the turkey and broccoli mixture, ½ cup of plain Greek yogurt, ½ cup of the shredded cheddar cheese, and ½ cup of the shredded mozzarella cheese. Stir well to ensure all ingredients are evenly incorporated.

              Transfer to Baking Dish: Pour the combined mixture into a lightly greased 9x13-inch casserole dish. Spread it evenly for consistent baking.

                Top the Casserole: Evenly sprinkle the remaining ½ cup cheddar and ½ cup mozzarella cheese over the top of the casserole. If desired, add a layer of breadcrumbs for an extra crispy topping.
