2 cups cooked brown rice

1 lb ground turkey

2 cups fresh broccoli florets

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese, divided

1 cup low-sodium chicken broth

1 cup sour cream

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

1 cup panko breadcrumbs

2 tablespoons olive oil, divided

Optional: chopped fresh parsley for garnish

Preheat Your Oven: Start by preheating your oven to 350°F (175°C) to ensure it’s ready for baking once your casserole is assembled.

    Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once shimmering, add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, stirring frequently, until both are fragrant and the onions turn translucent. Next, add the ground turkey to the skillet, breaking it apart with a spatula. Season the mixture with salt, black pepper, dried thyme, and paprika. Continue cooking, stirring occasionally, until the turkey is browned and no longer pink, about 6-8 minutes.

      Steam the Broccoli: While the turkey is cooking, fill a pot with water and bring it to a vigorous boil. Place the fresh broccoli florets in a steamer basket and position it over the boiling water. Cover and steam for 3-4 minutes, just until the broccoli is bright green and tender yet crisp. Remove and set aside to cool slightly.

        Combine the Ingredients: In a large mixing bowl, combine the cooked brown rice, turkey mixture, steamed broccoli, chicken broth, and sour cream. Mix everything until thoroughly combined. Gently fold in half of the shredded cheddar cheese until evenly distributed.

          Transfer to Baking Dish: Lightly grease a 9x13-inch baking dish with cooking spray or a little olive oil. Pour the rice and turkey mixture into the dish, spreading it evenly across the bottom. Top with the remaining shredded cheddar cheese, ensuring an even layer.
