4 large russet potatoes

1 cup cooked ground turkey (seasoned with salt and pepper)

1 cup steamed broccoli florets (chopped)

1 cup cheddar cheese (shredded)

1/2 cup cream cheese (softened to room temperature)

1/4 cup sour cream

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) to get it nice and hot for the potatoes.

    Bake the Potatoes: Rinse each russet potato under cold water, scrubbing off any dirt. Dry them thoroughly with a kitchen towel. Using a fork, prick each potato several times to allow steam to escape. Rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the Filling: While the potatoes are baking, prepare the filling. In a large mixing bowl, combine the cooked ground turkey, chopped steamed broccoli, shredded cheddar cheese, softened cream cheese, sour cream, garlic powder, onion powder, and salt and pepper. Mix thoroughly until all the ingredients are well blended.

        Stuff the Potatoes: Once the potatoes are tender and cooked through, remove them from the oven and let them cool for a few minutes to handle. Carefully cut a lengthwise slit on the top of each potato to create a pocket. Use a spoon to gently scoop out some of the potato flesh, making sure to leave enough around the edges to keep the potato's structure intact.

          Combine and Fill: Add the scooped potato flesh to the turkey and broccoli mixture, stirring gently to combine all the ingredients. Spoon the filling mixture back into the hollowed-out potatoes, piling it slightly on top for an enticing look.
