4 large bell peppers (any color of your choice)

1 pound ground turkey

1 cup cooked quinoa (or rice)

1 cup shredded mozzarella cheese (plus extra for topping)

1 cup diced tomatoes (fresh or canned)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley or basil for garnishing (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot enough when it's time to bake.

    Prepare the Bell Peppers: Carefully cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the exterior of each pepper with olive oil for added flavor, then place them cut-side up in a baking dish.

      Cook the Turkey Filling:

        - In a large skillet, warm the olive oil over medium heat.

          - Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes or until the onion turns translucent and fragrant.

            - Introduce the ground turkey into the skillet, breaking it up with a spatula. Cook until the turkey is browned and cooked through, approximately 7-8 minutes.

              Combine Filling Ingredients:

                - Once the turkey is browned, stir in the diced tomatoes, cooked quinoa (or rice), Italian seasoning, paprika, salt, and black pepper. Mix the ingredients thoroughly and allow them to simmer together for an additional 2-3 minutes, letting the flavors meld.

                  Add Cheese: Remove the skillet from the heat and fold in the shredded mozzarella cheese until everything is well mixed and creamy.

                    Stuff the Peppers: Carefully spoon the cheesy turkey mixture into each prepared bell pepper, packing the filling firmly but ensuring it doesn’t overflow.
