Ingredients

1 sheet of puff pastry (thawed if frozen)

2 cups cherry tomatoes, halved

1 cup goat cheese, crumbled

1 tablespoon extra virgin olive oil

1 teaspoon balsamic vinegar

2 cloves garlic, minced

Fresh basil leaves, for garnish

Salt and freshly ground black pepper, to taste

1 egg (for egg wash)

Instructions

Preparation of Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry sheet to smooth it. Cut the pastry into squares measuring approximately 4 inches by 4 inches and arrange them on a baking sheet lined with parchment paper for easy cleanup.

Creating Borders: With a sharp knife, gently score a smaller square about ½ inch inward from the edges of each pastry square, taking care not to cut through the whole pastry. This scored area will puff up to create a beautiful border for the tartlet.

Toss the Tomatoes: In a mixing bowl, combine the halved cherry tomatoes, olive oil, balsamic vinegar, minced garlic, salt, and freshly ground black pepper. Toss the mixture thoroughly to ensure the tomatoes are evenly coated with the dressing.

Filling the Tartlets: Carefully spoon the cherry tomato mixture into the center of each puff pastry square, keeping the filling within the bordered area you created. Evenly crumble the goat cheese over the top of the tomatoes for a creamy texture.

Egg Wash: In a small bowl, beat the egg until well mixed. Use a pastry brush to apply the egg wash along the borders of each tartlet. This step is crucial as it will provide a gorgeous golden color to the puff pastry as it bakes.

Baking: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is puffed up and turns a lovely golden brown.

Finishing Touches: Once baked, remove the tartlets from the oven and allow them to cool for a few minutes. Before serving, garnish each tartlet with fresh basil leaves for a burst of color and flavor.

Serve: These delightful Cherry Tomato Puff Tartlets are best enjoyed warm as a delicious appetizer or a light snack that’s sure to impress your guests!
