Ingredients

2 large sweet potatoes, cut into uniform fries

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 cup shredded sharp cheddar cheese (or your preferred vegan cheese)

1 cup canned chili (beef, turkey, or vegetarian)

¼ cup sour cream or Greek yogurt (optional, for serving)

2 green onions, finely chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions

Preheat Your Oven: Begin by heating your oven to 425°F (220°C). Preheating is key to achieving crispy, golden fries.

Prepare the Sweet Potatoes: In a large mixing bowl, combine the sweet potato fries with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Toss until the fries are thoroughly coated with the seasoning.

Bake the Fries: Spread the seasoned sweet potato fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes. Flip the fries halfway through baking to ensure they become crispy on all sides, until they are tender inside and crispy outside.

Heat the Chili: While the fries are baking, pour the canned chili into a saucepan. Cook over medium heat, stirring occasionally until the chili is heated through and simmering. This helps to bring out the flavors while preventing it from sticking to the pan.

Assemble the Dish: Once the fries are golden and crispy, remove them from the oven. Generously sprinkle the shredded cheese over the hot fries, then return them to the oven for another 5 minutes, or until the cheese is melted and bubbling.

Serve Up the Goodness: Carefully take the cheesy veggie fries out of the oven. Spoon the warmed chili generously over the cheesy fries. You can add a dollop of sour cream or Greek yogurt for a creamy texture, then finish by garnishing with chopped green onions and jalapeño slices if you wish.

Dig In: Enjoy your spicy, cheesy veggie fries immediately while they are hot and fresh! Feel free to customize them further with additional toppings like diced avocado or fresh salsa for an extra layer of flavor.
