Chili Garlic Tofu Stir-Fry

400g firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

4 cloves garlic, finely minced

2 tablespoons fresh ginger, finely minced

1 red bell pepper, thinly sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas, trimmed

2 tablespoons chili garlic sauce (adjust according to spice preference)

1 tablespoon sesame oil

2 teaspoons rice vinegar

1 tablespoon sugar (optional, to balance the heat)

2 green onions, chopped, for garnish

Sesame seeds, for garnish

Cooked rice or noodles, for serving

Prepare the Tofu: Start by cutting the pressed tofu into bite-sized cubes (about 1-inch pieces). In a mixing bowl, combine the soy sauce and cornstarch to create a marinade. Gently toss the cubed tofu in this mixture until all sides are coated evenly; this will give the tofu a lovely crispy texture.

    Cook the Tofu: In a large non-stick skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once the oil is shimmering, add the tofu cubes in a single layer. Allow them to cook for about 5-7 minutes, occasionally flipping them to ensure they become golden brown and crispy on all sides. Once done, transfer the tofu to a plate and set aside.

      Sauté Aromatics: Using the same skillet, add the remaining tablespoon of vegetable oil. When the oil is hot, add the minced garlic and ginger. Sauté these aromatics for about 30 seconds, stirring constantly until they release their fragrance but be careful not to let them burn.

        Stir-Fry Vegetables: Add the sliced red bell pepper, broccoli florets, julienned carrot, and snap peas to the skillet. Stir-fry these colorful vegetables for roughly 4-5 minutes, tossing them frequently until they are tender-crisp and vibrant in color.

          Combine Sauce and Tofu: Return the crispy tofu to the skillet with the sautéed vegetables. In a small bowl, whisk together the chili garlic sauce, sesame oil, rice vinegar, and optional sugar. Pour this sauce over the tofu and vegetables, tossing everything together until well-coated. Cook for an additional 2-3 minutes, ensuring everything is heated through.

            Finish and Serve: Remove the skillet from heat. Sprinkle chopped green onions on top of the stir-fry for added freshness and crunch. Serve this vibrant dish over a bed of cooked rice or noodles, and garnish with a sprinkle of sesame seeds for a beautiful touch.
