Ingredients

8 rice paper wrappers

1 cup cooked vermicelli noodles

1 cup cooked shrimp, halved (or tofu for a vegetarian option)

1 cup shredded purple cabbage

1 medium carrot, julienned

1 cucumber, julienned

1 ripe avocado, sliced

1 cup fresh mint leaves

1 cup fresh basil leaves

1 cup fresh cilantro leaves

1/4 cup hoisin sauce (for dipping)

2 tablespoons peanut butter (optional, for sauce)

1 tablespoon rice vinegar (optional, for sauce)

Salt and pepper to taste

Instructions

Prepare the Ingredients: Begin by cooking the vermicelli noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Meanwhile, wash and prepare the vegetables by shredding the purple cabbage, julienning the carrot and cucumber, and slicing the avocado into thin pieces.

Soak the Rice Paper: Pour warm water into a shallow dish. Gently immerse one rice paper wrapper into the water for about 5 seconds or until it begins to soften. Take care not to soak it for too long, as it may become too fragile to handle.

Assemble the Rolls: Place the softened rice paper on a clean countertop or a large plate. In the center of the wrapper, add a small handful of vermicelli noodles, a few pieces of halved shrimp (or tofu for a vegetarian option), and a colorful mix of the shredded purple cabbage, julienned carrot, and cucumber. Top with a slice of ripe avocado and a few fresh herbs: mint, basil, and cilantro.

Roll It Up: Start rolling the rice paper from the bottom upwards. As you roll, carefully fold in the sides to encase the filling. Roll tightly, ensuring the ingredients are secure within the wrapper, until the entire roll is complete. Repeat this process with the remaining ingredients to make additional rolls.

Make the Dipping Sauce: In a small mixing bowl, combine the hoisin sauce with the peanut butter and rice vinegar (if using). Stir well until the mixture is smooth. If the sauce is too thick, add a splash of water to achieve your desired consistency.

Serve and Enjoy: Slice the chilled rice paper rolls in half diagonally and arrange them on a beautiful platter. Serve alongside the hoisin-peanut dipping sauce for a delightful taste experience.

Prep Time: 20 minutes | Total Time: 20 minutes | Servings: 4 (2 rolls per serving)

                - Presentation Tips: Garnish the platter with a sprinkle of sesame seeds or a few extra herb leaves for added color and visual appeal. Enjoy as a light appetizer or a refreshing meal!
