1 cup canned pumpkin puree

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

3 large eggs, at room temperature

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour, sifted

1 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or vegetable oil, or alternatively, line it with parchment paper for easy removal after baking.

    Mix Wet Ingredients: In a spacious mixing bowl, add the canned pumpkin puree, granulated sugar, packed brown sugar, vegetable oil, eggs, and vanilla extract. Using a whisk, combine these ingredients until the mixture is smooth and uniformly blended, ensuring no lumps remain.

      Combine Dry Ingredients: In a separate bowl, sift the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. This step helps incorporate air and ensures that the spices are evenly distributed without any clumps.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients in the large bowl. Using a spatula, gently fold the batter together until just mixed. Be cautious not to overmix—this can result in a dense loaf rather than a light and fluffy one.

          Add Nuts and Other Mix-ins: If you choose, now fold in the chopped walnuts or pecans and/or raisins or chocolate chips into the batter for added texture and flavor.
