Ingredients

4 boneless, skinless chicken breasts

4 slices of ham (preferably black forest or honey ham)

4 slices of Swiss cheese

1 cup of all-purpose flour

2 large eggs

1 cup of breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons Dijon mustard

2 tablespoons butter, melted

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Meanwhile, prepare a baking dish by lightly greasing it with cooking spray or a small amount of butter to prevent sticking.

Prepare the Chicken: Place a chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken until it is about 1/2 inch thick. Repeat this process with the remaining chicken breasts, ensuring they are evenly flattened for consistent cooking.

Assemble the Cordon Bleu: Take each flattened chicken breast and lay a slice of ham and a slice of Swiss cheese on top. For an extra layer of flavor, consider spreading a thin layer of Dijon mustard directly on the cheese. Carefully roll the chicken tightly from one end to the other, securing the edges with toothpicks or baking twine as necessary. Repeat this with all of the chicken breasts.

Set Up Breading Stations: Create an efficient breading assembly line by setting up three shallow bowls: one filled with flour seasoned generously with salt, pepper, garlic powder, onion powder, and paprika; a second bowl containing beaten eggs; and a third bowl with breadcrumbs.

Bread the Chicken: Take each rolled chicken breast and dredge it in the flour mixture, ensuring to shake off any excess. Next, dip it into the beaten eggs, allowing any extra to drip off, and finally coat it evenly with breadcrumbs. Place the breaded chicken rolls seam-side down in the prepared baking dish to keep the rolls intact during baking.

Add Butter: Drizzle the melted butter over the top of the chicken rolls. This will add richness and promote a beautiful golden crust as they bake.

Bake the Chicken: Cover the baking dish with aluminum foil to lock in moisture during cooking. Bake in the preheated oven for about 25-30 minutes. After this initial time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C) and the breadcrumb coating is golden brown.

Serve: Once baked, allow the chicken to rest for about 5 minutes before carefully removing any toothpicks. Slice each roll into medallions for an elegant presentation, and garnish with freshly chopped parsley before serving.

                  Prep Time: 20 minutes | Total Time: 1 hour | Servings: 4

                    - Presentation Tips: Arrange the sliced medallions on a serving platter, and consider adding a sprig of parsley on top of each piece for a pop of color. A side of mixed greens or a light salad makes a lovely accompaniment!
