Coconut Lime Chicken Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup coconut milk

Zest of 2 limes

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons honey

2 tablespoons soy sauce (or tamari for gluten-free)

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and black pepper, to taste

1 cup shredded coconut (you can choose sweetened or unsweetened)

Fresh cilantro, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling)

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine the coconut milk, lime zest, lime juice, honey, soy sauce, minced garlic, minced ginger, red pepper flakes, salt, and black pepper. Whisk vigorously until all ingredients are well integrated.

    Marinate the Chicken: Place the chicken cubes into the bowl with the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap or transfer the mixture to a resealable plastic bag. Refrigerate for at least 1 hour, but for the best flavor, marinate for 4 hours or overnight.

      Preheat the Grill: Heat your grill to medium-high, aiming for a temperature range of 375°F to 400°F (190°C to 200°C).

        Assemble the Skewers: Take the marinated chicken out of the refrigerator. Carefully thread the chicken pieces onto the skewers, making sure to leave a small gap between each piece to promote even cooking.
