1 cup coconut milk

1/3 cup fresh lime juice (about 3 limes)

2 tablespoons lime zest

2 tablespoons honey or agave syrup

2 garlic cloves, minced

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper (optional for a kick of heat)

1 teaspoon salt

1/2 teaspoon black pepper

Marinate the Shrimp: In a large mixing bowl, combine the coconut milk, fresh lime juice, lime zest, honey or agave syrup, minced garlic, ground coriander, cayenne pepper (if using), salt, and black pepper. Whisk the ingredients until well blended to create a flavorful marinade. Add the peeled and deveined shrimp into the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but for best results, allow it to marinate for up to 2 hours.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes prior to grilling. This will help prevent them from burning on the grill. If using metal skewers, you can skip this step.

      Preheat the Grill: Preheat your grill or grill pan to a medium-high temperature. It should be hot enough to achieve a nice char on the shrimp without overcooking them.
