12 oz (340 g) spaghetti or your preferred pasta

1 cup fresh basil leaves, tightly packed

1/3 cup pine nuts (or substitute with walnuts for a cost-effective option)

1/2 cup grated Parmesan cheese

2 cloves garlic, finely minced

1/2 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

1 pint cherry tomatoes, cut in half

1/4 cup fresh mozzarella balls (bocconcini) - optional

Fresh basil leaves, for garnish

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the spaghetti (or chosen pasta) and cook according to the package directions until al dente. Once cooked, drain the pasta and immediately rinse it under cold water to halt the cooking process. Set the pasta aside to cool completely.

    Make the Pesto: In a food processor, combine the packed basil leaves, pine nuts, grated Parmesan cheese, and minced garlic. Pulse the mixture several times until all ingredients are finely chopped. While the food processor is running, slowly drizzle in the olive oil, allowing the pesto to blend into a smooth sauce.
