Ingredients

2 cups fresh corn kernels (or 1 can of corn, drained)

1 cup all-purpose flour

2 large eggs

1/2 cup milk

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/4 cup red bell pepper, finely diced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika (optional for an extra layer of flavor)

Vegetable oil (for frying)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the fresh corn kernels (or drained canned corn), all-purpose flour, eggs, and milk. Add in the grated Parmesan cheese, finely chopped green onions, diced red bell pepper, baking powder, salt, black pepper, and smoked paprika if using. Stir the mixture gently until just combined; it's perfectly fine for the batter to be a little lumpy—this will give the fritters a delightful texture.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan to about 1/4 inch deep. Heat the oil over medium heat. To test if the oil is ready, drop a small spoonful of the batter into the oil; it should sizzle right away, indicating that the oil is sufficiently hot.

Fry the Fritters: Using a tablespoon or a small cookie scoop, carefully drop spoonfuls of the batter into the hot oil, slightly flattening each fritter with the back of the spoon. Work in batches to avoid crowding the pan. Fry the fritters for approximately 3-4 minutes on each side, or until they are golden brown and crispy.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil. Keep them warm in a low oven while you complete the remaining batches.

Serve: Enjoy the corn fritters warm, garnished with a sprinkle of fresh herbs like cilantro or parsley. For an extra touch, serve with a side of dipping sauce, such as creamy sour cream or a flavorful spicy aioli.
