Ingredients

2 cups all-purpose flour

1 cup rolled oats

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup almond flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsweetened applesauce

1/2 cup plain Greek yogurt

1/4 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 cup fresh or frozen cranberries, chopped

1/2 cup sliced almonds, plus extra for topping

Zest of 1 orange

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper for seamless removal of the loaf later on.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, packed brown sugar, granulated sugar, almond flour, baking powder, baking soda, salt, and ground cinnamon. Whisk these ingredients together thoroughly until they are well combined and no lumps remain.

Combine Wet Ingredients: In a separate bowl, blend the unsweetened applesauce, plain Greek yogurt, vegetable oil, eggs, and vanilla extract. Whisk the mixture vigorously until it is smooth and fully integrated.

Combine Mixtures: Gradually pour the wet ingredients into the bowl containing the dry ingredients. Using a spatula, gently stir the two mixtures together until just combined. Be cautious not to over-mix, as this could affect the texture; the batter will be thick.

Add Fruits and Nuts: Gently fold in the chopped cranberries, sliced almonds, and freshly grated orange zest, ensuring they are evenly distributed throughout the batter.

Pour into Pan: Spoon the batter into the prepared loaf pan, smoothing the top with a spatula. For an appealing finish, sprinkle additional sliced almonds on top to add a crunchy texture.

Bake: Place the loaf in the preheated oven and bake for 50 to 60 minutes. It's ready when a toothpick inserted into the center comes out clean. If the top of the loaf begins to brown too quickly, loosely cover it with aluminum foil during the last 15 minutes of baking to prevent over-browning.

Cool and Serve: After baking, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Carefully transfer it to a wire rack to cool completely before slicing.

Enjoy: Serve the loaf warm or at room temperature. For an extra treat, lightly toast slices before enjoying to enhance the flavors!

Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: About 10 slices

Presentation Tips: Consider drizzling a bit of honey or maple syrup over the slices when serving, and garnish with orange slices or additional cranberries for a pop of color.
