Creamy Avocado Pasta with Basil

2 ripe avocados

2 cups cooked pasta of your choice (spaghetti or fusilli recommended)

1 cup fresh basil leaves, tightly packed

2 cloves garlic, finely minced

1 tablespoon fresh lemon juice

1/4 cup extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

1/4 cup grated Parmesan cheese (optional, for serving)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Before draining, reserve approximately 1/2 cup of the pasta water to adjust the sauce later.

    Prepare the Avocado Sauce: While waiting for the pasta, halve the avocados and scoop the flesh into the bowl of a food processor. To this, add the fresh basil leaves, minced garlic, fresh lemon juice, and extra virgin olive oil. Season generously with salt, freshly cracked black pepper, and red pepper flakes if you want some heat.

      Blend Until Smooth: Secure the lid on the food processor and blend the mixture until it reaches a smooth and creamy consistency. If the sauce is too thick, gradually add reserved pasta water, one tablespoon at a time, blending until you achieve your desired sauce consistency.

        Combine: Once the pasta is cooked and drained, return it to the pot over low heat. Pour the creamy avocado sauce over the hot pasta and gently toss everything together until the pasta is evenly coated. Remove from heat.
