Creamy Baked Penne with Spinach & Alfredo

12 ounces penne pasta

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 teaspoon red pepper flakes (optional, for a spicy kick)

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup whole milk

1 cup grated Parmesan cheese, divided

2 cups shredded mozzarella cheese, divided

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain and set the pasta aside.

      Sauté the Vegetables: In a spacious skillet, heat the olive oil over medium heat. Add the minced garlic and optional red pepper flakes, cooking for about 1 minute, or until fragrant. Introduce the chopped spinach and sauté for about 3-4 minutes until it wilts. Season with salt and pepper, then remove from heat and set aside.

        Prepare the Alfredo Sauce: In a medium saucepan, mix together the heavy cream, whole milk, ½ cup of the grated Parmesan cheese, onion powder, garlic powder, and a pinch of salt and pepper. Heat over medium heat, stirring frequently until the cheese melts and the sauce thickens slightly, approximately 5-7 minutes.

          Combine the Ingredients: In a large mixing bowl, combine the drained penne pasta, sautéed spinach, and the creamy Alfredo sauce. Stir gently but thoroughly until the pasta is evenly coated in the sauce.

            Assemble the Bake: Grease a 9x13-inch baking dish. Pour the pasta mixture into the dish, spreading it evenly. Top with the remaining 1½ cups of shredded mozzarella cheese and the remaining ½ cup of grated Parmesan cheese, ensuring an even coverage.
