Ingredients

12 oz spaghetti

2 cups heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup fresh basil leaves, packed

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1/4 teaspoon nutmeg (optional)

Extra basil leaves for garnish

Optional: Cherry tomatoes, halved for garnish

Instructions

Cook the Spaghetti: Begin by bringing a large pot of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, be sure to reserve about 1 cup of the pasta water.

Prepare the Alfredo Sauce: In a large skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for approximately 1 minute, or until the garlic is fragrant and golden, taking care not to burn it.

Add the Cream: Carefully pour the heavy cream into the skillet, stirring to combine it with the garlic. Bring the mixture to a gentle simmer and let it cook for 2-3 minutes, stirring occasionally to prevent sticking.

Incorporate the Cheese: Slowly whisk in the grated Parmesan cheese, allowing it to melt into the cream mixture. Stir continuously until the sauce becomes smooth and creamy. Season the sauce with salt, black pepper, and a pinch of nutmeg, if you’re using it.

Blend in Fresh Basil: In a blender, add the fresh basil leaves along with about 1/2 cup of the Alfredo sauce. Blend until you achieve a smooth and vibrant green purée. Pour this basil mixture back into the skillet and stir well to combine it with the creamy sauce.

Combine Pasta and Sauce: Add the drained spaghetti directly into the skillet with the creamy basil Alfredo sauce. Toss the spaghetti to ensure it is evenly coated. If the sauce is too thick, incorporate the reserved pasta water gradually, until achieving your desired consistency.

Serve: Once combined, remove the skillet from heat and transfer the spaghetti onto serving plates. Garnish with additional fresh basil leaves and halved cherry tomatoes, if desired, for a burst of color. Serve warm and enjoy!
